RAW SUGAR

Corn Starch

Raw sugar, also known as turbinado sugar, is light brown in color and comes in crystalized form. It is primarily sucrose (96–99%) and a small amount of molasses. Raw sugar contains about the same number of calories per teaspoon as table sugar. Although it may impart a slightly different flavor than table sugar because it contains molasses, raw sugar can be used like table sugar for baking or sweetening coffee and tea.

Raw sugar has a richer flavor due to the presence of molasses, so use equal parts or less when substituting unrefined raw sugar for white sugar. Overall, the presence of minerals and the ability to use less raw sugar in place of white sugar makes raw sugar a better alternative to white sugar.Raw sugar isn’t even really raw. It’s just slightly less refined, so it retains some of the molasses.
There’s no more nutritional value in raw sugar than there is in white sugar or brown sugar,”

WHITE SUGAR

Corn Starch

White sugar is one of the most popular sweeteners used in American kitchens today. From baked goods to beverages, this all-purpose sweetener has been a favorite for centuries. But what is white sugar?

White sugar is the crystallized sucrose extracted from either sugarcane or sugar beets. After harvesting the sugarcane or sugar beets, the juice is extracted and boiled down to remove moisture. As the moisture diminishes, the natural sucrose in the juice begins to crystallize. The crystallized sugar is removed, leaving other extracts behind in the form of molasses.

Sugar not only provides sweetness in baked goods and beverages, but it assists in important chemical reactions that occur during cooking and baking.

REFINED WHITE SUGAR

Corn Starch

To make refined sugar, raw sugar or sucrose is extracted from sugarcane or any other plant with naturally occurring sugars, which then undergoes processing to remove molasses. The most common types of refined sugar are table sugar or white sugar and high-fructose corn syrup.

These refined sugars are typically used to add flavor to foodsbut can also act as a preservative in jams and jellies or help foods like pickles and breads ferment. They’re also often used to add bulk to processed foods like soft drinks and ice cream.
